No Crema or Thin, Pale Espresso
Symptoms
- Espresso pours with little or no crema on top
- Crema is thin, pale, and dissipates within seconds
- Shot runs very fast (under 20 seconds for 36 g output)
- Espresso tastes watery, sour, or lacks body
- Stream appears blonde and translucent almost immediately after extraction begins
Likely Causes
- Stale coffee beans. Beans more than 4–6 weeks past their roast date have lost the CO2 that produces crema. Pre-ground coffee goes stale within hours of grinding.
- Grind too coarse. Water passes through the puck too quickly when the grind is too coarse, under-extracting the coffee and producing no crema.
- Dose too low. Using less than 16 g in an 18 g basket creates gaps and channels in the puck, allowing water to rush through unevenly.
- Brew temperature too low. If the thermoblock has not fully heated (check that the ready LED is illuminated with a steady light), extraction will be weak. Allow the full 3–5 minute warm-up before brewing.
- Channelling. Cracks or uneven density in the coffee puck cause water to find a fast path through, over-extracting one area and under-extracting the rest. This produces thin, uneven crema.
Step-by-step Fix
- Check your beans. Look for a roast date on the bag. Ideally, use beans roasted within the last 7–30 days. If your beans are older than 5 weeks, replace them with a fresh bag. Store beans in an opaque, airtight container at room temperature — never in the fridge or freezer.
- Grind finer. Adjust your grinder to a finer setting. Pull a test shot. The target is 36 g of liquid from 18 g of grounds in 25–30 seconds. If the shot still runs fast, adjust your grinder finer by one small increment at a time.
- Weigh your dose. Place the empty portafilter on a kitchen scale and tare it. Grind into the basket and check the weight reads 18.0 ± 0.5 g. Adjust the grind time on your grinder if it dispenses too little or too much.
- Distribute and tamp evenly. After dosing, use the dosing funnel and give the portafilter a gentle shake or use a distribution tool to level the grounds. Tamp with firm, level pressure (approximately 15 kg). An uneven tamp creates channels.
- Ensure the machine is fully heated. Wait until the ready LED is illuminated with a steady light. Run a blank flush (5 seconds of water through the empty group head) to stabilise the group head temperature before inserting the portafilter.
- Check for channelling. If using the bottomless portafilter, watch the underside during extraction. Channelling appears as uneven, spurting streams rather than a single, centred flow. If you see this, focus on improving your distribution and tamping technique. Also check that the shower screen is clean and not blocked — remove and soak it weekly.
- Pull a test shot. After making adjustments, pull a shot and time it. A well-extracted double espresso should be 18 g in, 36 g out, in 25–30 seconds. The crema should be thick, hazelnut-brown, and persist for at least 60 seconds.
